This week I’ve been playing with fruit-related recipes, and it’s been so much fun!
Baking is magic for me: takes me to a state of meditation, creativity and presence that I LOVE! Since my kids are home now, they’ve also been part of my kitchen lab, which turns it in to a win-win-win: arts&crafts + fun + healthier snacks for all of us!
Today I am sharing my healthy APPLE PIE.
✨ gluten-free
✨ refined-sugar free
✨ vegan
✨ much lighter and tastier than the ones you’re used to
✨ kids approved!
Ingredients:
Crust (for 8-inch removable-bottom tart pan -> double amount if bigger)
- 2 2/3 cups oat flour
- 1/2 cup coconut sugar
- 1/2 tsp each: cinnamon and salt
- 1/2 cup olive or coconut oil
- 4 tbsp water
Filling
- 4 cups peeled apple, sliced thin
- 1 tbsp pure maple syrup
- (optional) 1/2 cup raw walnuts, diced small
Crumble Topping (double if you like a thick crumble layer)
- 1/2 cup rolled oats
- 1/2 cup oat flour
- 1/2 cup coconut sugar
- 1/4 cup olive or coconut oil
- Dash salt
Instructions:
5. In a third bowl, combine all crumble ingredients. Sprinkle the crumble evenly over the apples.
6. Bake 50 minutes or until apples are soft and tender.
7. Allow to cool 20 minutes before removing the springform.
