A Cozy Weekend Recipe That Supports Your Fertility Journey

As the weekend approaches, many of us look forward to slowing down, spending time in the kitchen, and nourishing ourselves with comforting food. But what if your next delicious meal could also support your fertility?

That’s why today, I’m sharing one of my favorite fertility-boosting recipes: Stuffed Eggplant with Ground Turkey and Colorful Veggies. It’s wholesome, satisfying, and full of ingredients that actively support reproductive health.

Fertility-Boosting Stuffed Eggplant Recipe

Ingredients:

  • 2 large eggplants

  • 1 lb ground turkey

  • 1 yellow bell pepper, diced

  • 1 red bell pepper, diced

  • 1 orange bell pepper, diced

  • 1 tomato, diced

  • 2 carrots, grated

  • 1/4 cup nutritional yeast

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp paprika

  • Salt and pepper to taste

Serves 2 to 4!

Directions:

  1. Preheat your oven to 375°F (190°C).

  2. Place the eggplants on a baking sheet and roast whole for 30 minutes, or until soft.

  3. Let them cool slightly, then slice each in half lengthwise and scoop out the inside, leaving about a ½-inch shell.

  4. Chop the scooped-out eggplant flesh and set aside.

  5. In a large skillet, heat olive oil and cook the ground turkey until browned.

  6. Add the chopped eggplant flesh, diced bell peppers, tomato, and grated carrots. Cook for 5–7 minutes until softened.

  7. Stir in garlic powder, paprika, salt, pepper, and nutritional yeast.

  8. Spoon the filling into the eggplant shells and return to the oven for another 25–30 minutes.

  9. Serve warm and enjoy every nourishing bite.
